Best Vegan Lactation Cookies Recipe
Ingredients:
- 1 pouch Maja's Chocolate Chip Cookie Mix
- Flax egg: 1 tbsp flaxseed meal + 3 tbsp water
- 12 tablespoons butter (¾ cup)
- 2 tsp vanilla extract
- ½ tsp cinnamon
- 5 tbsp coconut oil (or sub another type of oil like canola)
- 5 Tablespoons Brewer's Yeast Powder
- 2 cups of rolled oats
- ½ cup chocolate chips
- Optional: ¼ cup flaked coconut; ¼ cup sunflower seeds; 2 tablespoons almond butter
Instructions:
First, preheat your oven to 350° Fahrenheit and line a cookie sheet with parchment paper. Then you’ll want to prepare the flax egg. In a small bowl, mix together the flaxseed meal and water and let it sit and thicken for 10 minutes.
Next, in a medium sized bowl, add the butter and mix it with a stand or hand mixer until the consistency becomes creamy. Add in Maja’s Chocolate Chip Cookie Mix and combine. Then add in the vanilla extract, cinnamon, coconut oil, brewer’s yeast, and flax egg. Stir the mixture until everything is well combined. Finally, fold in the oats, chocolate chips, and any of the optional ingredients.
Roll the dough into 1 inch circles and place them on the cookie sheet. They should bake for 11-13 minutes or until golden brown. Let them cool completely before enjoying!
