Instructions:

First, begin by adding Maja’s dry mix to a large bowl. Add in the applesauce, oil, and non-dairy milk and slowly combine with a hand mixer. Next, add in the boiling water and beat on low speed until smooth.

Pour the cake batter into a pan and bake for 27 minutes at 350°F for a glass pan or 325°F for a dark pan. After removing the pan from the oven, let it cool completely.

The next step is to break up the cake into chunks and place it in a large bowl. Add in the coconut cream and combine until it becomes a moldable dough.

Next, form the dough into circles and place them into the cake pop mold. Place them in the refrigerator for about 20 minutes to harden a bit.

While the cake pops are in the fridge, you can prepare the chocolate. Melt the white chocolate and mix it with 4.2 oz. of coconut cream until smooth. Divide the mix up into a few smaller bowls for each autumn color. Add a few drops of food coloring and mix until well combined. Melt the semi-sweet chocolate and combine with the 1.7 oz. of coconut cream until smooth as well.

Before coating the cake pops, stick the popsicle stick in the melted chocolate and then in the cake pop itself. Then have fun dipping them in all the autumn colors and decorating them with fun designs and sprinkles!

Refrigerate the cake pops for about 2 hours and then enjoy!
