High Protein Banana Chocolate Bar Recipe
Ingredients:
Protein bars:
- 1 single serve pouch of Maja's Cacao & Coconut Overnight Oats
- ½ tsp baking powder
- ½ tsp baking soda
- 3 ripe bananas
- 1 tsp vanilla extract
- ¼ cup maple syrup
- ¼ cup coconut oil (or oil-free applesauce)
- ⅓ cup chocolate chips
- ⅓ cup chopped banana chips (we love the Trader Joe's Banana Slices)
Toppings:
- 2 tsp chocolate chips
- ¼ cup chopped banana chips
Instructions:
Preheat your oven to 350 °F and spray a 9x9 baking dish with cooking spray. Next, you’ll want to take a large bowl and add Maja’s Overnight Protein Oats along with the baking powder and baking soda. Mix the contents together.
In a blender, combine the banana, vanilla extract, maple syrup, and coconut oil until it is smooth. Add this mixture to the dry mix and stir until the ingredients are well combined. Fold in the chocolate chips and chopped banana chips. Pour the batter into the baking dish and spread it out evenly with a spatula. Sprinkle some extra chocolate chips and chopped banana chips along the top before baking.
Bake the dish for about 15 minutes or until the toothpick comes out clean. Let the dish cool completely before slicing into bars.
Yum!
