Thin Mint Cupcakes
Who doesn’t love the combination of chocolate and mint? There’s a reason why the Girl Scouts sell so many Thin Mints each year, and it’s because there is something irresistible about that delicious combo of flavors.
Our Thin Mint Cupcake recipe will give you the same yummy flavors with a unique cupcake twist. These would be the perfect treat for your next event or even just for a movie night at home!

Thin Mint Cupcakes Recipe
Ingredients:
- One package Maja's Chocolate Cake & Cupcake Mix
- ⅓ cup applesauce
- ¼ cup oil
- ½ cup boiling water
- ½ cup unsweetened non-dairy milk
- 1 tsp mint extract
- ½ cup melted semi sweet chocolate
- Garnish: Fresh mint leaves
Instructions:
Start by preheating your oven to 350° Fahrenheit and prep your cupcake pan with liners. Begin by adding the dry mix to a large bowl, and then add in the applesauce, oil, and milk. With a hand mixer or whisk, combine the ingredients until it is a smooth consistency. Once it reaches this consistency, add in the mint extract. Lastly, beat in the boiling water until everything is well combined.
Pour the batter into the cupcake pan and place in the oven for about 18-20 minutes. The cupcakes are done when a toothpick comes out clean!
After the cupcakes have cooled completely, you can begin working on the chocolate topping. Take the semi sweet chocolate and melt it in the microwave in short increments until the consistency is thin and smooth. Add a spoonful of melted chocolate on each cupcake and spread it all around the top of the cupcake.
Add a fresh mint leaf for garnish and enjoy!
