Valentine's Cake & Cupcakes

Valentine's Cake & Cupcakes Recipe
Yield: 12 cupcakes or a 9 inch cake
Special Equipment: Cupcake tin or an adorable Heart Cake Pan or Heart Bundt Pan
Ingredients:
Cake/Cupcake Ingredients:
- 1 packet of Maja's Chocolate Cake & Cupcake Mix
- ⅓ cup applesauce
- ¼ cup oil
- ½ cup boiling water
- ½ cup unsweetened non-dairy milk
- 1 teaspoon vanilla extract (optional)
Buttercream Frosting Ingredients:
- 1 cup vegan butter
- 3 cups powdered sugar
- 1 tsp vanilla extract (or ½ tsp Rose Extract)
- 1-3 tablespoons plant-based milk
Instructions:
First, preheat your oven to 325° Fahrenheit. Begin by adding the dry mix to a large bowl. Mix in the applesauce, oil, and non-dairy milk. Using a hand mixer or a whisk, be sure to combine until the contents are smooth. If you are using the optional vanilla extract, add that in and mix again.
Then, slowly pour the boiling water into the mix and beat it on low speed until well combined. Pour the batter into a greased pan of your choice and place the pan in the oven. If you are making cupcakes, bake them for 18-20 minutes. For a larger cake, bake for 20-22 minutes. Your dessert is all done when the toothpick comes out clean!
While the cakes/cupcakes are baking, you can begin to prepare the buttercream frosting. Using a stand or hand mixer, beat together the vegan butter until creamy. Add in the powdered sugar and the rose extract. If the consistency is too thick, you can add 1 tablespoon of milk until it becomes a little thinner.
At this point, you can separate the frosting into a few separate bowls and add some natural food coloring to make the cakes more festive. Red and pink would be perfect for Valentine’s Day! Frost the cake or cupcakes with a knife or piping bag after the cakes have cooled for at least 10 minutes. Don’t forget the Valentine’s sprinkles!
