Fall is just around the corner! It’s time to bring on all the pumpkin scented candles, the warm cozy blankets, and yes, even the yummy waffles!

We have a banana caramel waffle recipe that we know you are sure to love - and best of all, it is both vegan-friendly and absolutely delicious. It is the perfect breakfast or late night snack to satisfy your sweet tooth. 

Banana Caramel Waffle Recipe

Yield: 8 waffles

Prep time: 5 minutes

Cook time: 10 minutes

Total time: 15 minutes

Special equipment: 4 slice waffle maker

Ingredients: 

For the Banana Waffles: 

  • 1 pkg. Maja Pancake & Waffle Baking Mix
  • 2/3 cup non-dairy milk
  • 1/3 cup oil
  • 1/2 cup very ripe bananas (mashed)
  • For the Banana Caramel Topping: 

  • 2 Bananas (sliced)
  • 1/2 cup vegan caramel (E.g. Hey Boo coconut caramel sauce)
  • Non-dairy whipped cream (optional)
  • Recipe: 

    First, preheat your waffle maker and spray liberally with nonstick spray. Then, you can begin mixing the ingredients in a large bowl. Whisk the baking mix, non-dairy milk, oil, and mashed bananas until smooth.

    Add half of the batter (about 1 ½ cups) to the center of the preheated waffle maker and gently close. Allow the waffles to cook for about 3-5 minutes or until your waffle maker timer goes off. You can repeat this with the second half of the batter, but don’t forget to spray the waffle maker again before adding the remaining batter!

    Next, you’re ready to make the banana caramel topping. Add the sliced bananas to a shallow bowl and gently coat them with the caramel sauce. It’s that simple!

    These waffles are best served warm - fresh off the waffle iron! Add your caramel bananas (and whipped cream if your heart desires) to the top of the waffles and enjoy!

    Here’s a tip! If you have bananas that are too ripe for eating, transfer them into a small ziplock bag and keep them in the freezer until the mood strikes you for banana waffles! They can be defrosted in the fridge or at room temp and be ready to go as needed!
