Chocolate Coconut Protein Bar Recipe

Ingredients:

For the bars:

  • One package of Maja's Cacao & Coconut Overnight Oats
  • 1 cup gluten-free flour
  • 2 tbsp cinnamon
  • ¼ tsp salt
  • 1 tsp baking powder
  • ¼ cup chopped mixed nuts
  • ¼ cup grated coconut
  • 1 cup oat milk
  • 1 tsp vanilla
  • 2 tbsp maple syrup
  • ½ cup applesauce
  • 1 banana (sliced)

For the coconut frosting:

  • 3 tbsp ground coconut
  • ½ cup sugar
  • 2 tbsp coconut cream

 

Instructions: 

First, we will begin by preparing the frosting. Take a small bowl and whisk together the sugar, ground coconut, and coconut cream. Set it aside for the time being once it is nice and smooth.

Next, preheat your oven to 375° Fahrenheit. In a medium-sized bowl, begin adding the dry ingredients. Mix together the package of oats, mixed nuts, grated coconut, flour, cinnamon, baking powder, and salt until well combined. In a separate bowl, add the oat milk, maple syrup, applesauce, and vanilla. Slowly add the dry ingredients into the wet mixture and stir until well combined. The last step is to fold in the sliced bananas.

Line a 9x13 pan with parchment paper, and slowly pour the batter into the prepared dish. Place it in the oven and bake for about 35 minutes or until a toothpick comes out clean.

Let the bars cool completely before drizzling the coconut frosting on top. Slice the bars, store in an air-tight container, and you’ve got yourself covered for a nutritious breakfast all week!
