Matcha Thumbprint Cookies Recipe

Ingredients: 

For the Matcha Cookies: 

For the Yogurt Cream Filling:

  • ¼ cup vegan Greek yogurt (or traditional Greek yogurt)
  • ¼ cup vegan cream cheese (or traditional cream cheese)
  • 1 tbsp powdered sugar
  • ½ tsp vanilla extract 
  • Optional garnish: Matcha powder

Instructions: 

Begin by preheating the oven to 325° Fahrenheit and line a baking sheet with parchment paper. Then you’ll want to prepare the yogurt filling. Combine the Greek yogurt, cream cheese, powdered sugar, and vanilla in a small bowl and beat with a hand mixer until smooth. Once the consistency looks right, set it aside until the cookie dough is ready.  

To begin the cookies, add the butter and milk into a medium-sized bowl and beat on low until it becomes creamy. Slowly add in the vanilla and baking mix and beat until well combined. Take a small spoonful of dough (about 1 ½ tsp) and roll it into a ball. Line the baking sheet with the dough balls and press your thumb into each cookie to make an indent on the top. Add a small amount of the yogurt filling into the indent of each cookie until it is even on the top. Be sure you don’t overfill! 

Bake the cookies for about 9-10 minutes. Once the cookies have cooled completely, add the matcha powder on top to garnish! Store these cookies in the fridge in an airtight container for up to 3 days.
