Patriotic Crepes
Everybody knows that certain foods are always associated with the 4th of July - hamburgers and hot dogs, potato salad and baked beans, and of course, some kind of patriotic dessert. But let’s not forget about the most important meal of the day - breakfast!
You can certainly make a 4th of July breakfast part of your holiday and keep it both festive and healthy. Be sure to add a little red, white, and blue to your plate this year with delicious and nutritious Patriotic Crepes, made with Maja’s Pancake and Waffle Mix! You can even have the little ones join in and make a family activity!

Patriotic Crepes Recipe
Ingredients:
½ Cup Blueberries
¼ Cup Beetroot
½ Cup Milk
2 Tablespoons Canola Oil
½ Cup Sugar
2 Cups Maja Pancake & Waffle Baking Mix
1 Tablespoon White Vinegar
Liquid from 1 Can Chickpeas (to make Aquafaba or Vegan Whipped Cream)
Recipe:
First let’s work on the natural coloring for the crepes.
- Red: In a blender add the beets and a little milk until it is well blended. Strain the mixture and reserve.
- Blue: Repeat the blender step with the blueberries except this time add the baking soda and milk as well. Strain the mixture and reserve.
Next, let’s work on the Vegan Whipped Cream: Open the can of chickpeas and strain out, saving all the liquid. Combine the liquid with the sugar and white vinegar in a bowl and beat until peaks form.
Time to make the crepes! To color the dough, separate the mixture equally into two bowls and add the red mixture to one and the blue mixture to another. From there, prepare the mix as indicated on the baking mix box. You will have to add additional milk and oil to make it a little more liquidy to achieve the crepe-like quality.
In a pan, add a little oil so that the crepe mixture does not stick. Make the crepes one at a time, using about a ¼ cup of mixture. Turn the crepe when it begins to bubble. Crepes do not take long so keep an eye on them! Continue adding the oil then the mix until all the mix is used up.
Serve as desired with whipped cream and decorate with blueberries or any other patriotic topping you like!
